All in One Brekke (breakfast)

When you’ve had a really long night, are craving ever thing in the pantry, then why not whip up an All in One Brekke.

This delicious mix of beans, eggs, sausage, hasbrowns, and cheese will definitely fix you up after a night out. This has all your favorite comforting featured made in one pan.

All in one brekke Serves 4

  • 4 slices of hashbrowns
  • 5 – 6 pieces of breakfast sausage
  • 1 can of baked beans
  • 3-4 eggs (depending on how any peopule eating, usually 1 egg per person)
  • 1 small onion, diced
  • 1/2 capsicum of choice
  • 1/4 cup cheese of choice
  • 1 tsp oregano
  • i tsp salt
  • 1 tsp pepper
  • 1 tsp garlic salt
  • 1 tsp cayenne pepper

Directions

  1. Preheat oven to 350F/180C
  2. In a oven safe frying pan  sauté onions and capsicum; season with some salt
  3. While onions are sautéing slice breakfast sausage
  4. Add sausage to pan and cook for about 1 min (meat should be under cooked, cooking will finish in the oven)
  5. Add baked beans and cook for 1 minute
  6. Transfer mixture to a bowl
  7. Spray bottom of oven safe pan with oil and lay down hash brown slices
  8. Spread bean mixture over the hash brown making it level
  9. Make a welt over each has brown for the eggs, later
  10. Cover and bake for 12 minutes
  11. Open oven, crack eggs over the previously made welts, and season with salt, pepper, garlic salt, cayenne pepper, and oregano
  12. Cook uncovered for 10-12 mins until whites are cooked
  13. Remove from oven, let rest for 5, then serve.
