When they say laughter is the best medicine but you would rather eat instead, then why not try this Mushroom Bolognese.
This is a classic meatless dish is something I make when I am feeling hungry and and need of some comfort. When there is pasta, there is satisfaction; when there is satisfaction there is happiness.
Mushroom Bolognese
Ingredients
- 2 garlic cloves, minced
- 1 red chili pepper, minced
- 1 red onion, finely diced
- 10-5 cremini mushrooms, stem removed, sliced
- 8-10 fresh basil leaves, chopped
- 1 tbs oregano
- 1 tsp chili flakes
- 2 tbs cayenne pepper
- 1 tsp ground cumin
- 1 tbs coconut oil
- 2 tbs apple cider vinegar
- 1 tbs tomato paste
- 1 jar pasta sauce of your choice
- 1 tsp brown sugar
- 1 -2 tbs heavy cream
- parmesan cheese
Directions
- In a deep pot, cook spaghetti per instructions on package and set aside for later use
- In a deep, wide frying pan heat coconut oil
- Add onion, chili pepper, garlic, and saute until onions are soft
- After onions become soft add mushroom and cook until mushroom shrinks and the water has almost evaporated
- Add oregano, cayenne, cumin, apple cider vinegar, tomato paste, brown sugar and mix
- Stir in pasta sauce, bring to a boil, let simmer for 10 minutes to let all the flavors mix
- Add chopped basil, heavy cream, and mix well
- Serve with cooked spaghetti, top it off with some parmesan, and ENJOY!
