Mushroom Bolognese

When they say laughter is the best medicine but you would rather eat instead, then why not try this Mushroom Bolognese.

This is a classic meatless dish is something I make when I am feeling hungry and and need of some comfort. When there is pasta, there is satisfaction; when there is satisfaction there is happiness.

Mushroom Bolognese

Ingredients

  • 2 garlic cloves, minced
  • 1 red chili pepper, minced
  • 1 red onion, finely diced
  • 10-5 cremini mushrooms, stem removed, sliced
  • 8-10 fresh basil leaves, chopped
  • 1 tbs oregano
  • 1 tsp chili flakes
  • 2 tbs cayenne pepper
  • 1 tsp ground cumin
  • 1 tbs coconut oil
  • 2 tbs apple cider vinegar
  • 1 tbs tomato paste
  • 1 jar pasta sauce of your choice
  • 1 tsp brown sugar
  • 1 -2 tbs heavy cream
  • parmesan cheese

Directions

  1. In a deep pot, cook spaghetti per instructions on package and set aside for later use
  2. In a deep, wide frying pan heat coconut oil
  3. Add onion, chili pepper, garlic, and saute until onions are soft
  4. After onions become soft add mushroom and cook until mushroom shrinks and the water has almost evaporated
  5. Add oregano, cayenne, cumin, apple cider vinegar, tomato paste, brown sugar and mix
  6. Stir in pasta sauce, bring to a boil, let simmer for 10 minutes to let all the flavors mix
  7. Add chopped basil, heavy cream, and mix well
  8. Serve with cooked spaghetti, top it off with some parmesan, and ENJOY!
