Thai Basil Chicken (Pad Krapow Gai) with Rice

When you are surrounded by peppers and home grown Thai basil, then why not make some Thai Basil Chicken with Rice.

I love to experiment with dishes from around the world and Thai flavor is one that I would love to master. A dream of mine is to visit Thailand and become educated with their cuisine and flavors.

Thai Basil Chicken (Pad Krapow Gai) with Rice

Ingredients

  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 1 cup fresh basil leaves
  • 3 garlic cloves, minced
  • 1 yellow onion, sliced
  • 2 green chilis, split
  • 3 chicken breasts, thinly sliced
  • 1 tbs lime juice
  • 2 tsp fish sauce
  • 2 tsp sriracha sauce
  • 2 tsp soy sauce
  • 2 tsp honey
  • 1 tbs sesame oil
  • chopped spring onion for garnish

Directions

  1. In a small bowl whisk together lime juice, fish sauce, sriracha, soy sauce, honey and set aside
  2. In a wok or a large frying pan heat 1/2 tbs sesame oil and saute  half the garlic and green chilis until fragrant
  3. Add sliced onions until evenly coated with oil
  4. Add capsicum and stir fry for 3-4 minutes
  5. Remove from heat and set aside
  6. Bring wok back to stove and heat remaining sesame oil and saute remaining garlic and green chilis until fragrant
  7. Add sliced chicken and stir fry until chicken is cooked
  8. Add onions, capsicum, and saute for 3-5 minutes
  9. Add basil leave and stir-fry sauce and cook for another 3-5 minutes
  10. Garnish with spring onion, serve with rice, and enjoy!
