When you are surrounded by peppers and home grown Thai basil, then why not make some Thai Basil Chicken with Rice.
I love to experiment with dishes from around the world and Thai flavor is one that I would love to master. A dream of mine is to visit Thailand and become educated with their cuisine and flavors.
Thai Basil Chicken (Pad Krapow Gai) with Rice
Ingredients
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 cup fresh basil leaves
- 3 garlic cloves, minced
- 1 yellow onion, sliced
- 2 green chilis, split
- 3 chicken breasts, thinly sliced
- 1 tbs lime juice
- 2 tsp fish sauce
- 2 tsp sriracha sauce
- 2 tsp soy sauce
- 2 tsp honey
- 1 tbs sesame oil
- chopped spring onion for garnish
Directions
- In a small bowl whisk together lime juice, fish sauce, sriracha, soy sauce, honey and set aside
- In a wok or a large frying pan heat 1/2 tbs sesame oil and saute half the garlic and green chilis until fragrant
- Add sliced onions until evenly coated with oil
- Add capsicum and stir fry for 3-4 minutes
- Remove from heat and set aside
- Bring wok back to stove and heat remaining sesame oil and saute remaining garlic and green chilis until fragrant
- Add sliced chicken and stir fry until chicken is cooked
- Add onions, capsicum, and saute for 3-5 minutes
- Add basil leave and stir-fry sauce and cook for another 3-5 minutes
- Garnish with spring onion, serve with rice, and enjoy!
