When its a Friday night, you don’t know what to eat, there are a few veggies, and you and check the freezer just to find sausage and salmon, then why not make this Sausage and Salmon Sauté Over Rice.
I created this easy recipe because my husband and I wanted to stay in and have a lazy night. We raided the fridge and freezer and this was our best option. We wanted to keep the meal healthy and quick to make so we had more time for fun later!
Sausage Sauté Over Rice
Ingredients
- 1 cup spinach
- 1 small red onion, sliced
- 1 capsicum (I like red), 1 in slcies
- 6-7 mushroom, quartered (shiitake is better, but brown button will do)
- 2 carrots, sliced round
- 2-3 pork sausage, sliced (I used Italian, but any flavor will do)
- 1 fillet salmon, cubed
- 1 tbs soy sauce
- 1 tbs oyster sauce
- 1 tbs hoisin sauce
- 1 tsp cayenne
- 1/2 lemon, juiced
- 2 tbs coconut oil
- salt
- pepper
Directions
- Wash salmon, pat dry, season with salt, pepper, and lemon juice
- Heat 1/2 tbs of coconut oil in a wok style pan
- Cook sliced sausage until brown and set aside
- Heat 1/2 tbs coconut oil
- Sauté salmon for 1-2 minutes and set aside
- Heat 1 tbs coconut oil in wok
- Add all chopped veggies except spinach
- Cook until carrots are soft and mushrooms have shrunk
- Add soy, oyster, hoisin, cayenne, salt, and pepper, mix well
- Add spinach, cook until wilted, and mix well
- On low heat mix in salmon and sausage
- Serve over rice and enjoy!
