When you have partied over the weekend, you think its best to pump your body with antioxidants, since shellfish is a good source of Selenium, then why not make some Shrimp and Crab Chowder.
A nice way to wrap up the weekend before going back to work is through a satisfied stomach. This warm, filling chowder is sure to make that happen. I like to have this soup with a slice of buttered French bread.u

Shrimp and Crab Chowder
Ingredients
- 3-4 leeks, chopped
- 1 onion, diced
- 1 carrot, diced
- 2-3 garlic, minced
- 5-6 potatoes cubed
- 4 cups chicken broth
- 2 cups water
- 1/2 cup corn
- 2 spring fresh thyme
- 1/2 cup flour
- 1-2 tbs butter
- 1-2 tbs old bay seasoning
- 8-10 large prawns, divined, peeled
- 1/2 cup, imitation crab meat
- 2 tsp cayenne
- 2 tsp paprika
- 2-3 tbs cream
Directions
- In a deep pot melt butter and add minced garlic
- Add carrot and saute
- Add leeks, onion, and thyme and mix well
- Add flour and mix well
- Slowly pour broth until soup thickens
- Add potatoes and cook until soft, about 15-20 mins
- Light mash soup and season with old bay, cayenne, paprika and mix
- Add corn then shrimp and crab. Cook until shrimp are pink
- Add cream and mix
- Serve in a big bowl and enjoy!
