Shrimp and Crab Chowder

When you have partied over the weekend, you think its best to pump your body with antioxidants, since shellfish is a good source of Selenium, then why not make some Shrimp and Crab Chowder.

A nice way to wrap up the weekend before going back to work is through a satisfied stomach. This warm, filling chowder is sure to make that happen. I like to have this soup with a slice of buttered French bread.u

Shrimp and Crab Chowder

Ingredients

  • 3-4 leeks, chopped
  • 1 onion, diced
  • 1 carrot, diced
  • 2-3 garlic, minced
  • 5-6 potatoes cubed
  • 4 cups chicken broth
  • 2 cups water
  • 1/2 cup corn
  • 2 spring fresh thyme
  • 1/2 cup flour
  • 1-2 tbs butter
  • 1-2 tbs old bay seasoning
  • 8-10 large prawns, divined, peeled
  • 1/2 cup, imitation crab meat
  • 2 tsp cayenne
  • 2 tsp paprika
  • 2-3 tbs cream

Directions

  1. In a deep pot melt butter and add minced garlic
  2. Add carrot and saute
  3. Add leeks, onion, and thyme and mix well
  4. Add flour and mix well
  5. Slowly pour broth until soup thickens
  6. Add potatoes and cook until soft, about 15-20 mins
  7. Light mash soup and season with old bay, cayenne, paprika and mix
  8. Add corn then shrimp and crab. Cook until shrimp are pink
  9. Add cream and mix
  10. Serve in a big bowl and enjoy!
