Potato and Leek Soup

When you have just fell down a flight of stairs, have heaps of bruises,  you want something to make you whole again, the why not make this vitamin K rich, Potato and Leek Soup.

Leeks and potatoes are a good source of vitamin K, and as a nurse vitamin K help with clotting and when nursing your self back to health you want to eat food that are pumped with vitamins and help heal your body. This soup is perfect for fixing up some broken spirits (and\\ bones)!

Potato and Leek Soup

Ingredients

  • 5-6 potato, diced
  • 3-4 leeks, chopped
  • 1 large carrot, diced
  • 6-8 mushrooms, quartered
  • 1 celery stalk, diced
  • 1 onion, diced
  • 1/4 cup corn
  • 2-3 garlic cloves, minced
  • 1 tbs butter
  • 1/3 cup flour
  • 2 cup vegetable broth
  • 2-3 cups water
  • 1 tsp corn starch
  • 2 spring thyme
  • 1 tbs cayenne powder
  • 1 tsp garlic powder
  • 1 tbs old bay season
  • 2-3 tbs cream
  • parmesan cheese, topping

Method

  1. Heat butter in a deep pot
  2. Add garlic and sauté until fragrant
  3. Add leeks, onion, carrot, mushroom, corn, and cook until leeks are soft
  4. Mix in flour and slowly pour broth into soup
  5. Bring to a boil,
  6. Take a small bowl, mix 1-2 tbs broth with corn starch, and pour back into the soup
  7.  Add potatoes and cook until potatoes are soft
  8. Add spring thyme, cayenne, garlic, and old bay seasoning
  9. Lightly mash, mix and add cream
  10. Serve in a bowl, garnish with parmesan cheese, and enjoy!
