When you moved to a foreign country that does not have an Olive Garden, you used to go there once a week for their unlimited soup, salad, & bread sticks, then why not try this Olive Garden copycat, Zuppa de Tuscana.
This hearty soup filled with meat, potatoes, and kale is sure to satisfy that Italian craving. All you need to do is whip up a salad with Italian style dressing and for the Olive Garden bread sticks, so some fresh garlic bread will have to do because I do not think I will be able to perfect their amazing bread sticks!
Zuppa de Tuscana (Olive Garden Copy Cat)
Ingredients
- 4 italian sausage links, casing removed, crumbled
- 4 slices bacon, chopped
- 4-5 kale leaves, de-stemmed, chopped
- 2 white potatoes, quartered, sliced
- 1 zucchini, halved, sliced
- 1 onion, diced
- 1 red capsicum, diced
- 2-3 garlic, minced
- 1-2 tsp cayenne powder
- 1-2 tsp chili flakes
- 4 cups chicken broth/stock
- 1/2 cup cream
- 1 tsp coconut oil
Method
- In a deep soup pot heat 1 tsp coconut oil
- Add sausage links and cook until meat is crumbled and no longer pink
- Remove and set aside, draining the fat on a tissue
- In the same pot, cook bacon then add: onion, garlic, capsicum, garlic, zucchini
- Season with cayenne and chili flakes, then add chicken stock, and 1-2 cups water; bring to a boil
- Add cooked sausage to soup
- Add Kale and cook for 7-10 minutes, until kale is soft
- Add cream, mix well
- Enjoy with some shredded cheese!
