Surf n Turf: Lamb, scallops, potatoes

When you have lots of time on your hands and want to make something fancy, delicious, and filling, then why not make this Surf n’ Turf dish with lamb, scallops, and potatoes!

I made this meal for my parents when I went visit them back home in California. Cooking in general gives me immense pleasure and having the opportunity to cook for my parents makes my day, I wanted showoff my newly improved cooking and plating skills, so decided to go this this surf n’ turf style menu. It takes some practice getting the timing right in order for the food to be served at optimal temperature.

Surf n Turf: Lamb, scallop, potato

Ingredients

For Potatoes

  • 10-12 baby potatoes, halved
  • 3-4 tbs melted butter
  • salt & pepper to taste

For lamb

  • 8 cuts of lamb steaks
  • 2 handful kosher sea salt
  • 2-3 springs rosemary
  • 5-6 garlic, minced
  • 2 tbs olive oil
  • salt & pepper to taste

For scallop

  • 8 bay scallops
  • 2 tbs butter
  • 3-4 garlic minced
  • salt & pepper to taste

Method

For Potatoes

  1. Preheat oven 245C/475F
  2. In a large pot enough water for the potatoes to be submerged
  3. Boil  the halved potatoes until soft, drain, and lay on a baking tray
  4. Baste the potatoes with butter
  5. Bake in oven for 25 minutes, basting at 15 minutes, then every 5 minutes, and then again before serving
  6. Season with salt and pepper
  7. While potatoes are baking prepare your cooking station for the lamb and scallop

For Lamb

  1. Wash and clean the lamb
  2. Season with salt and mix in rosemary, garlic, and olive oil; marinate for 30 minutes
  3. Remove from fridge 30 minutes before cooking
  4. Cook lamb 12ish minutes before eating, near the time the potatoes are done
  5. Heat a frying pan with coconut oil, once pan is hot cook lamb steaks 4-5 minutes each side depending on the thickness

For Scallop

  1. Wash and pat dry the scallop
  2. Season with salt and pepper
  3. While lamb is cooking, heat another pan and melt butter
  4. Add scallop and cook and each side for 2 minutes, glazing with butter
  5. Turn off heat and let rest

Assembly

  1. Lay buttered potatoes on the on the center of the plate
  2. Lay the lamb steaks over the potatoes
  3. Lay the scallops on top of the lamb steak
  4. Garnish with some green onions, and enjoy!
