When you just took a trip to the Auckland Food show and were introduced to Quorn; the meatless meat, then why not add some more veggies and make a Vegetarian Green Curry Served with Coconut rice!
My husband and I went the the Auckland Food show where we got to try a variety of new food products and Quorn was the only vegan option that was available that also tasted good. The samples were delicious so we bought some to try and it turned out great. If you cannot purchase Quorn at a supermarket near you, then just add more mushrooms or substitute for tofu.
Vegetarian Green Curry Served
Ingredients
- 1 zucchini, julienned
- 1 carrot, julienned
- 1/2 green capsicum, julienned
- 1/2 red capsicum, julienned
- 5-6 green beans, 2 inch chopped
- 6-7 shittake muchroom, quarted
- 5-6 oyster mushroom, largely chopped
- 1 red onion, sliced
- 2-3 garlic cloves, minced
- 5-6 kaffir lime leaves
- 1-2 green chilis, split
- 1/2 can coconut cream
- 1 tbs fish sauce
- 3 tbs green curry paste
- 1 packet Quorn
- 1 tbs ghee
Method
- In a wok style pan, heat ghee
- Add garlic, onion, and chilis, and cook until fragrant
- Add vegetables: zucchini, capsicum, green bean, mushrooms and mix
- Mix green curry paste with 1 cup of hot water
- Pour mixture into vegetables
- Cook for 4-5 minutes
- Mix in Quorn and cook for another 5 minutes
- Mix in coconut cream, cook for another 5 minutes, remove from heat, enjoy with coconut rice
