Reading the title of the recipe sounds like a mouthful but it definitely tastes better than it sounds and is not as complicated as one might think. The combination of these flavors is surely to turn your mouth into a fiesta. The spiciness from the habanero paired with the sweetness from the mangos is surely to satisfy the summer cravings!
Jamaican Jerk Chicken with Mango Avocado salsa, beans, and coconut rice
Ingredients
For Chicken
- 2-3 small chicken breast, butterflied, pounded 1 cm thick
- 3-4 whole garlic clove
- 2 inch ginger
- 2 habanero, split
- 2 stalk green onion, only green
- 1 tbs olive oil
- 1 tbs brown sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp allspice
For mango salsa
- 1-2 ripe mango, diced
- 1-2 ripe avocado, diced
- 1/2 purple onion, diced
- 1 orange capsicum, diced
- 1 tomato, diced
- handful cilantro, chopped
- 1 tbs lime juice
- salt and pepper to taste
For beans
- 1/2 onion, diced
- 1 can black re-fried beans
For coconut rice
- 1 cup rice, soaked for 20 minutes
- 300 ml coconut water
- 1/2 can coconut cream
Method
For chicken
- In a blender, blend garlic, ginger, habanero, olive oil, and green onion
- Mix in brown sugar, cinnamon, nutmeg, and all spice; adjust salt to taste
- Marinate chicken for 2 hours with jerk paste, reserving half for basting
- Heat a wide frying pan, add coconut oil and pan fry chicken on both sides until cooked through
For mango salsa
- Combine all ingredients in a big mixing bowl, mix well, and set aside
For beans
- In a small pot heat coconut oil and fry onions until soft
- Mix in beans and stir
For coconut rice
- Wash and drain soaked rice
- Transfer into rice cooker
- Pour coconut water, coconut cream, 1 tbs ghee, and mix well
- Turn on cooker let the machine do its job!
Assembly
- Plate rice and beans next to each other
- Put chicken breast over rice and beans
- Dollop salsa over chicken and enjoy!
