Lamb medallions with pumpkin mash, green bean, zucchini, mushrooms, & whipped feta

When you have not rolled up your sleeves in the kitchen for over a week because you have been on holiday and your meals were all prepped for you and you miss the of knife slicing through your vegetables, when why not pull out all the stops and make Lamb medallions with pumpkin mash, green bean, zucchini, mushrooms, & whipped feta.

When I made this recipe, I was definitely in the mood to impress because I did not get a chance to be in the kitchen for a week! I wanted to keep the recipe fresh, healthy, and fancy. I never used pumpkin to make mash, but will definitely give it a go again. Next time I would add a few regular potatoes to the mix to make the mash a bit more dense.

Lamb medallions with pumpkin mash, green bean, zucchini, mushrooms, & whipped feta

Ingredients

For lamb medallions

  • 8 lamb medallions
  • 4 tbs lamb rub (from Pickle & Pie)
  • 2-3 tbs coconut oil

For pumpkin mash

  • 200 g pumpkin, peeled, cubed
  • 1 tbs butter
  • 1 tbs cream

For Vegetables

  • 6 button mushrooms, sliced
  • 1 zucchini, quartered, sliced
  • handful green beans, trimmed, cut 2″
  • 3-4 garlic cloves, mince
  • 1 tbs butter

For whipped feta

  • 150 g feta cheese (I used garlic and cumin)
  • 4 tbs cream cheese

 

Method

For whipped feta

  1. Put both ingredients in a food processor and process for 3-4 minutes
  2. Put in a container and store in the fridge

For Vegetables

  1. In a wide frying pan heat butter and saute garlic until fragrant
  2. Add vegetables, season with salt and pepper, and cook until mushrooms have shrunk
  3. Remove from heat and set aside

For pumpkin mash

  1. In a steamer, steam pumpkin cubes for 15 minutes or until you can mush it between your fingers
  2. Remove from heat, add butter, cream, and mash
  3. Set aside

For lamb medallions

  1. Wash, pat dry, and season medallion with rub mix, and set aside until the veggies are almost cooked
  2. In a wide frying pan heat coconut oil and cook medallions on both sides for 3-4 minutes for medium cooked lamb
  3. Let rest for 3-4 minutes and serve over pumpkin mash

Assembly

  1. Dollop pumpkin mash in the center of the plate
  2. Place lamb medallions over mash
  3. Put vegetables to the side
  4. Top with whipped feta
  5. ENJOY!!
