When you feel like making Punjabi cuisine and craving something creamy, then why not make Mattar Paneer.
Mattar paneer is a creamy north Indian dish that is made with peas, cheese, tomatoes, and spices. This easy recipe is quick to make, especially when you are tired after a long day at work. I enjoy this dish with mango pickle and parathas!
Mattar Paneer
Ingredients
- 3/4 onion, finely chopped
- 1 tomato, finely chopped
- 1 inch ginger, grated
- 3-4 garlic cloves, minced
- 1 green chilli, split
- 1 tsp cumin seeds
- 1 tbs ghee
- 1 tsp turmeric
- 1 tsp chili powder
- 2 tsp coriander/cumin mix
- 1/2 cup green peas
- 200 g paneer, cubed
- 7-8 cashews
- 2 tbs milk
- 2-3 tbs cream
- 2 tsp fenugreek leaves (kasuri methi)
- Cilantro for garnish
- salt to taste
Method
- Grind cashew and milk into a paste, and set aside
- In a wide pan heat ghee and sizzle cumin seeds until fragrant
- Add onion, garlic, ginger, green chilli mix well, and saute until onions are soft
- Add tomatoes and lightly mash until the tomatoes are mushy
- After tomatoes are mushy add green peas; mix well
- Add spices: turmeric, chili powder, coriander/cumin; mix well and cook for 5 minutes
- Add cubed paneer and cook for another 5 minutes
- Add cashew paste, cream, and kasuri methi; mix well
- Season with salt and garnish with cilantro
- Enjoy with paratha, roti, or rice!
