Sweet Potato and Lamb Pie

When its the weekend and you want to eat something warm and hearty and whole need some red meat in your life, then why not make this Sweet Potato and Lamb Pie

I usually make something similar called Shepards Pie, but this time i wanted to try something new. I incorporated ricer flavors and ultimately make a satisfying wholesome meal. The texture of the lamb was soft and the gravy made it moist! Along with that the sweet potato topping balanced the rich flavor of the lamb.

Sweet Potato and Lamb Pie

Ingredients

For Lamb filling

  • 1/2 tbs coconut oil
  • 1 1/2 lbs boneless lamb, cubed
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1/4 cup green peas
  • 1/2 onion, diced
  • 2-3 garlic cloves, minced
  • 1 tsp cayenne powder
  • 2 spring rosemary
  • 2 tbs tomato paste
  • 1 cup chicken stock
  • 1 cup red wine
  • 1 tbs butter
  • 1 tbs flour

For sweet potato topping

  • 2 large sweet potatoes (kumara)
  • 2 large russet potatoe
  • 4 tbs butter divied
  • 2-3 tbs cream
  • 1 tsp salt
  • 1/4-1/2 cup parmesan cheese, divided

Method

Pre-heat oven 350F/180C

For lamb filling

  1. In a deep, oven safe pot heat coconut oil and fry onions and garlic until fragrant
  2. Add cubed lamb and cook until browned on each side
  3. Add peas, carrot, celery, carrot, and tomato paste; mix well
  4. Add red wine, broth, rosemary spring, cayenne powder, and salt; mix well, bring to a boil, and then simmer uncovered for 30-40 minutes
  5. The soup should have reduced by half, remove about 1/2 cup of broth and set aside
  6. In a small pot melt butter and add flour; whisk well
  7. Slowly pour reserved sauce to make a thick gravy
  8. Pour gravy into the lamb mixture; mix well and remove from heat

For Sweet Potato Topping

  1. While the lamb is simmering boil water in a part pot
  2. While water is coming to a boil peel and cube potatoes and kumara
  3. Add potatoes and salt to boiling water and boil until potatoes are soft
  4. Drain water and mash potatoes using a masher
  5. Add butter, cream,  parmesan cheese and salt mix well

For Assembly

  1. If you made the lamb filling in an oven safe dish  scoop the sweet potato topping over the filling
  2. Using a fork make horizontal lines across top and place small cubes of butter on top
  3. Bake in the oven for 20 minutes and until top is browned and golden
