Bacon and Vegetable Frittata

When its Sunday morning breakfast and you are cooking for the whole family, then why make this easy Bacon and Vegetable Frittata.

What I love most about this recipe is you can use any vegetable that is available in the refrigerator. On this particular day I had some delicious bacon, onion, and capsicum! Pick your vegetables and your meats mix with your egg and bake. It doesn’t get better than that.

Bacon and Vegetable Frittata

Ingredients

  • 6 eggs
  • 1 tbs coconut oil
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp cayenne pepper
  • 1 tsp chili flakes
  • 1/2 tsp garlic powder
  • 2 tbs milk
  • 1 tbs olive oil
  • 4 strips bacon, chopped
  • 1/2 red capsicum, diced
  • 1 onion. diced
  • 1/2 cup spinach, chopped
  • 1/2 cup mozzarella cheese
  • 1/2 tomato, diced

Method

  1. Preheat oven 350F/180C
  2. In a large mixing bowl whisk: eggs, oregano, basil, cayenne pepper, chili flakes, garlic powder, milk, and olive oil
  3. In a oven safe frying pan heat coconut oil
  4. Cook red capsicum, bacon, and onion
  5. Add spinach and mix well
  6.  Pour egg mixture into pan, top with tomatoes and cheese
  7. Cook for 5-7 minutes or until egg mixtures starts pulling from edges
  8. Remove from heat and bake in oven for 15-20 or until cooked through center
  9. Cut into slices and enjoy!
