When its Sunday morning breakfast and you are cooking for the whole family, then why make this easy Bacon and Vegetable Frittata.
What I love most about this recipe is you can use any vegetable that is available in the refrigerator. On this particular day I had some delicious bacon, onion, and capsicum! Pick your vegetables and your meats mix with your egg and bake. It doesn’t get better than that.
Bacon and Vegetable Frittata
Ingredients
- 6 eggs
- 1 tbs coconut oil
- 1 tsp oregano
- 1 tsp basil
- 1 tsp cayenne pepper
- 1 tsp chili flakes
- 1/2 tsp garlic powder
- 2 tbs milk
- 1 tbs olive oil
- 4 strips bacon, chopped
- 1/2 red capsicum, diced
- 1 onion. diced
- 1/2 cup spinach, chopped
- 1/2 cup mozzarella cheese
- 1/2 tomato, diced
Method
- Preheat oven 350F/180C
- In a large mixing bowl whisk: eggs, oregano, basil, cayenne pepper, chili flakes, garlic powder, milk, and olive oil
- In a oven safe frying pan heat coconut oil
- Cook red capsicum, bacon, and onion
- Add spinach and mix well
- Pour egg mixture into pan, top with tomatoes and cheese
- Cook for 5-7 minutes or until egg mixtures starts pulling from edges
- Remove from heat and bake in oven for 15-20 or until cooked through center
- Cut into slices and enjoy!
