Cheesy Breakfast Potatoes

When you are make eggs for breakfast and you need something savory, filling to go with it, then why not make a side of Cheesy Breakfast Potatoes 

I originally wanted to make traditional hashbrowns with shredded potatoes, but the recipe calls for soaking the potatoes for a few hours, being short on time, I thought why not dice the potatoes really small and make them like small fries. With a little bit of cheese the potatoes are perfect for morning brunch.

Cheesy Breakfast Potato

Ingredients

  • 3 russet potatoes, cubed
  • 1/2 onion, diced
  • 1 tbs coconut oil
  • salt
  • pepper
  • 1 tsp cayenne pepper
  • 2 tbs chicken broth (or water)
  • 2 tbs cheese

Method

  1. In a wide frying pan heat coconut oil and fry onions
  2. Add diced potatoes and season with salt, pepper and cayenne
  3. Cook for 10-12 minutes or until browned on each side
  4. Add chicken brown and simmer until broth has evaporated and potatoes are soft
